Our meal begins unconventionally—with the main event: a strip steak served on a cast-iron platter, seasoned simply with salt and pepper. Riveira enthusiastically pairs it with chimichurri, a staple he learned to perfect from his abuelo, the man who inspired his love for cooking over open flames. “The asado is more than food,” he explains. “It’s how we celebrate holidays and the end of the week in Argentina. It’s tradition—sausages, cuts of meat, and maybe a vegetable for humor.”
